Vinification and aging: The grapes are left to wither on the vine until late September. Once the right degree of withering is reached, the hand-harvested grapes are destemmed and left to ferment in an open vat in contact with the skins. Once the right alcoholic and residual sugar content is achieved, the fermentation is stopped, and the resulting wine is aged in small oak barrels for 18 months until bottling.
Organoleptic characteristics:
Aroma: Perceptions of dried apricot and candied fruit, figs, and vanilla. Elegant spiciness and toasting notes stand out. Color: Golden with amber reflections, brilliant. Taste: Dense, well-balanced between sweet, tannic, and savory notes. Extremely long finish. Notes: It is recommended to enjoy it at a cellar temperature of 14/16 °C and to serve it in a large glass. Excellent with blue cheeses.
